Cooking with Oils; Essential BBQ Recipes!

There’s two great recipes listed below for kicking off your summer and Memorial Day weekend. We have spicy lime chicken skewers that pairs nicely with a cool citrusy melon cocktail that has you wishing you were on a sandy white beach somewhere. Both recipes are easy and they contain Young Living Vitality essential oils! What’s not to love??
Cooking with oils is actually really easy and great for you! A few things to remember before cooking:

Conversion: Due to the highly concentrated nature of oils, usually 1-3 drops is okay in most recipes. Typically 1 drop is equal to 1 teaspoon.

Dilute: Essential oils should be diluted in a lipid first which helps ensure that the oil and flavor gets dispersed appropriately throughout the entire dish.

Spicy Lime Chicken Skewers

Servings: 4-6
Cook Time: 30 Minutes
Total Time: 30 Minutes, plus 8 hours to marinate

Marinade Ingredients:
3 T Soy Sauce
1/4 Cup Honey
1 Tablespoon Vegetable Oil
3 Drops of Lime Vitality Oil
2 Drops of Ginger Vitality Oil
4 Garlic Cloves, peeled and roughly chopped
1 1/2 Tablespoons Sriracha Sauce

Main Ingredients:
1 1/4 teaspoon salt
3 lbs boneless skinless chicken thighs, trimmed and cut into 2” pieces
2 Tablespoons chopped cilantro
In a blender combine all Marinade Ingredients and blend until completely smooth. Pour 1/2 cup of the marinade into a small bowl. Cover and refrigerate the bowl until ready to serve as this will be your sauce at the end.

Combine the chicken and remaining marinade in a medium to large sized bowl. Cover and refrigerate. Let the chicken marinate for 8 or more hours. It’s best to just let it marinate over night.

Remove chicken from the marinade and thread pieces onto skewers. Fold the pieces in half if they are too long and thin.

Be sure the grill is clean, and preheat to medium-high heat. Grease the grill with vegetable or coconut oil. Grill the chicken kebabs, covered, until golden brown. Turn skewers every 10-13 minutes. If the chicken seems to be browning too quickly, turn the heat down.

Transfer skewers to a platter. Warm up the reserved marinade and drizzle over the top. Scatter chopped cilantro over top and garnish with cilantro sprigs.

What’s Memorial Day without a little cocktail…or two?? Here’s a great favorite with a take on using Young Living’s Lemon Vitality oil. Be careful because these little suckers are addicting. So, drink responsibly and enjoy!!

TokyOIL Tea Cocktail
Servings: 1

1 Part Vodka
1 Part Gin
1 Part Bacardi Limon Rum
1 Part Triple Sec
1 Part Midori Melon Liquer
1-2 Drops Lemon Vitality Oil
1/2 oz Simple Syrup

Pour all contents into glass, add ice, and garnish with a cherry and a lemon or lime slice.

Sip and enjoy!
